Terroir in Your Cup
Like a fine wine carries the signature of its terroir, specialty coffee tells the story of its origin. At Carrera Café, every bean comes from somewhere, and that place changes everything.
Discover our coffeeCoffee is a plant deeply sensitive to its environment. Altitude, temperature, rainfall, soil composition, the shade of surrounding trees: each parameter influences the development of the fruit and thus the aromas that will end up in your cup.
A coffee grown at 2000 meters altitude in Ethiopia has nothing to do with a coffee grown at 800 meters in Brazil. Same bean, same species, radically different results. This is called coffee terroir, in total analogy with wine.
At Carrera, we select our beans with this conviction: origin is the primary determinant of quality. The rest, roasting, extraction, service, only reveals its potential.
Ethiopia is the original home of coffee. In the high plateaus of Yirgacheffe or Sidama, coffee trees grow in the shade of tropical forests, at altitudes exceeding 2000 meters. The result is a coffee with intense floral notes, bergamot, jasmine, orange blossom, with a lively acidity and a long finish with tea notes.
Ethiopian coffee is often the first love of specialty coffee enthusiasts. Its unexpected, almost tea-like quality in the cup, surprises and converts. At Carrera, we offer it as filter coffee to let its delicate aromas fully express themselves.
Colombian coffee is often described as "everyone's coffee." Not because it's generic, but because it's balanced. Moderate acidity, medium body, notes of caramel, cashew, and sometimes ripe red fruits. It's a coffee that appeals to both novice and connoisseur, and is equally suitable for espresso and filter.
Guatemalan coffees, grown in the volcanoes of Antigua or Huehuetenango, offer a rich and deep profile. Notes of dark chocolate, sweet spices (cinnamon, nutmeg), full body, and a dry, long finish. The ideal coffee for a powerful espresso or a well-constructed cappuccino.
Mexican coffees from Chiapas or Oaxaca are often underestimated. Sweet, low in acidity, with notes of honey, hazelnut, and sweet almond: these are accessible, comforting coffees, ideal for a first espresso of the day or a morning latte.
The best way to choose your origin is to talk to the barista. Tell them what you usually like: fruity or chocolatey, light or full-bodied, acidic or mild. In thirty seconds, they'll guide you to the daily bean that suits you best. That's what specialty coffee service is all about.
