Artisanal Charcuterie from Charlevoix at Carrera Cafe: why it’s different

No industry, no shortcuts. The charcuterie that garnishes our boards comes from Charlevoix and is raised as it used to be: slowly, with care, so that it is felt in every bite.

Charlevoix is not just a landscape. It is a terroir that produces some of the best organic farms in Quebec. The region is 90 minutes from Quebec City. Our charcuterie makes the trip.


The Organic Charcuterie from Charlevoix represents for us what Italian charcuterie has always been: an artisanal transformation act, where the care put into farming is directly found on the plate. The animals are raised free-range, fed without GMOs, slaughtered locally. This is not a marketing argument. It is visible in the color of the meat, in the firmness of the fat, in the absence of aggressiveness in the mouth.

Carrera Cafe has chosen to work only with identified and traceable producers. Our menu is short because our sources are rigorously selected.

Ham, dry sausage, coppa, lonza. An Italian selection reinterpreted with local meats.


Seasonal

Raw Ham from Charlevoix

Minimum 12 months aging, salt and pepper. Thin slices, melting in the mouth, fine salt finish. The base of every serious board at Carrera.

Classic

Dry Sausage from the Terroir

Black pepper, fennel, garlic. A tight texture, a long aromatic persistence. The kind of sausage you ask for again without needing to explain why.

Premium

Coppa Bio Charlevoix

Pork neck, mild brine, aged 8 weeks. Marbled, veined, with rare elegance for a Quebec product. The perfect pairing with a light natural wine.

Order the full board with a light red or textured white. Sit on the terrace in summer. Take your time. It’s the opposite of a pit stop, and exactly what you sometimes need.

Gamay, pinot noir, trousseau: lightly tannic wines that do not overpower the subtlety of artisanal charcuterie. The classic pairing our servers always recommend.

Charcuterie + Espresso to Finish

Finish a board with a simple espresso: the bitterness of the coffee cleanses the palate, cuts the fat, and awakens the senses. The Italian tradition, adopted in Quebec.
