CHARLEVOIX AS A TERROIR
The Charlevoix region, an hour and a half northeast of Quebec City, is one of Quebec's richest in terms of artisanal production. Charlevoix Organic Charcuteries raise their animals outdoors, without compromising on quality. The result: bold flavors, clean textures, an honesty in the product that is immediately recognizable.
THE ESPRESSO PAIRING: WHY IT WORKS
Espresso has a natural acidity and a slight bitterness that cleanse the palate after each bite of fatty charcuterie. The fat from the charcuterie, in turn, softens the tannins of the coffee. It's a virtuous circle: each makes the other better. Like a driver and their race engineer.
