One region, an exceptional terroir
Less than two hours from Quebec City, Charlevoix is one of Canada's most remarkable gourmet regions.
The Charlevoix region benefits from a unique microclimate: the marine air of the Saint Lawrence, harsh winters, short and intense summers. These conditions give animals slow development that concentrates flavors. Animals are raised with more space and a more natural diet.
This terroir has attracted passionate artisans: cheesemakers, charcutiers, breeders. Charlevoix has become the cradle of authentic Quebec gastronomy, far from fashions and trends.

What sets Charlevoix charcuterie apart: the animals' diet. Raised outdoors, fed without GMOs, the pigs develop dense, very flavorful muscle mass. The difference is immediately noticeable: a lasting taste, an aromatic complexity that industrial charcuterie never achieves.
Maple smoking is a regional signature. The maple sugar slightly caramelizes the surface, creating a golden crust that contrasts with the pearly fat inside.

Soft cheeses
Triple cream, Quebec brie, ash-ripened. To open the board, awaken the taste buds. Served at room temperature, never taken out of the cold at the last minute.
