The cheeses we serve at Carrera Cafe are selected from the best affineurs and artisanal producers in Quebec. Our criterion: cheeses with character, persistence, and a clear identity. Not generic cheeses, but cheeses that tell a story.

Firm Cheese from Quebec
Nutty, slightly spicy, with a dry texture. Cheeses that resist the knife and unfold in the mouth. Perfect pairing with a light red wine.
Washed Rind Cheeses
Powerful in aroma, mild on the palate. The perfect contradiction of a cheese with character. Pair with a textured white or a fruity petnat.
Local Blue Cheeses
Creamy, blue-veined, with a noble bitterness. The classic pairing: sweet wine or generous red wine. But a mild blue cheese with a petnat is also a good idea.

Cheese and wine pairings follow a few simple rules. And many delicious exceptions.
Firm Cheese + Light Red Wine
Natural Gamay or Pinot Noir: low tannin, fruity, cellar temperature. Firm cheese likes wines that don’t overpower it. Tannin destroys the aging. Fruitiness enhances it.
Washed Rind + Orange Wine
The oxidation of orange wine meets the complexity of washed rind cheese. An unexpected pairing that works immediately. Our most adventurous customers order it systematically.
Blue + Petnat Rosé
The freshness of bubbles and the acidity of rosé against the salt and bitterness of blue cheese. A contrasting pairing that always surprises. Ask our team to introduce it to you.
Never drink a great Bordeaux with a strong cheese: the tannins fight with the salt. Prefer a low-tannin natural wine, or a structured white. At Carrera, we will guide you based on what we have in the cellar that evening.
