The artisan
Borderon et Fils, Québec
The Borderon et Fils bakery represents everything we look for in a producer partner: ancestral know-how, constant demand, and deep roots in Quebec terroir.
An artisanal know-how
Borderon et Fils is a Quebec artisanal bakery that works flour with method and patience. Long fermentations, controlled baking, selected ingredients: each batch is a stand against ease.
Time as an ingredient
At Borderon et Fils, speed is not a value. The doughs ferment slowly, the strands rest, the crusts develop naturally. It’s this time that makes all the difference in taste.
Our commitment
Why we work with Borderon et Fils
At Carrera Café, choosing a supplier means choosing a value. We chose Borderon et Fils because their approach resembles ours: rigor, taste, refusal to compromise. A bit like in car racing, you don’t win with second-rate parts.
Focaccia
Our daily specialty
Focaccia is the bread of Southern Italy, the one that resists time and trends. Ours, delivered every morning by Borderon et Fils, is perfectly oiled and baked on the hearth.
Plain focaccia
Generous olive oil, flake salt, slightly crispy crust and alveolated, soft crumb. The base. The reference. Served warm with our boards or as a base for our homemade tartines.
Herb focaccia
Rosemary and garlic flower on a natural base. The aromatic version, which fills the room from the first batch. Available some days depending on the season and the inspiration of the Borderon house.
Focaccia in aperitif formula
In a generous portion, with dipping oil, olives, and a glass of red. It’s our most requested aperitif formula. Simple, direct, without artifice, like a well-executed lap.
The ideal pit stop
Petit-Champlain focaccia break
After a long walk through the alleys of Petit-Champlain, warm focaccia is the perfect refreshment. Sit down, order an espresso, tear the bread by hand. Carrera Café is made for these moments.
The breads
Bread by season
Beyond focaccia, Borderon et Fils supplies seasonal breads that enrich our tartines and boards. Breads with character and memory.
Country bread
Thick crust, dense and slightly tangy crumb, perfect for absorbing melting cheeses and Charlevoix rillettes. The base of our morning tartines and appetizer boards.
Natural sourdough bread
Sourdough fermentation maintained for years by Borderon et Fils. A complex flavor, remarkable preservation, impeccable texture. The elemental bread in all its nobility.
Seasonal breads
Depending on supplies and inspirations from Borderon et Fils, our menu features seasonal breads: spelt in autumn, walnut bread in winter, Provençal fougasse in summer. Every morning brings a surprise.
Barista’s tip
Bread and coffee pairing
A sourdough bread with a flat white. A cheese tartine with a long coffee. The richness of country bread calls for the roundness of a latte. Our baristas consider these pairings daily, like a chef pairs wines.
The pairings
Bread, toppings, and coffee
The bread from Borderon et Fils is not just a base: it’s the first ingredient. Here’s how it comes together with the other products on our menu.
Focaccia + Charcuterie from Charlevoix
Plain focaccia as a starting point, Charlevoix organic charcuterie as toppings. Sausage, coppa, dried ham: products that respect each other. A combination that sums up the identity of Carrera Café in one bite.
Country bread + Quebec cheeses
The acidity of country bread and the creaminess of aged Quebec cheeses: a combination that never goes out of style. The cheeses change according to the current selection, the bread remains. A stable base for shifting flavors.
The morning tartine
Toasted bread, salted butter, homemade jam or avocado spread. Simple. Effective. The kind of tartine you order at 8 a.m. with a cappuccino and a view of Petit-Champlain street. The best possible start to the day.
