Iced latte in Quebec: why Carrera Café’s Pit Stop is the best of the summer
When the July heat settles on the cobblestones of Petit-Champlain, only one thing is essential: a well-made iced latte. Not just any. The one made at Carrera Café, with the precision of an F1 timer and the ease of a summer that’s in no rush.
The real iced latte
What sets the good apart from the ordinary
A poorly made iced latte is lukewarm coffee on melted ice. A well-made iced latte is something else.
The iced latte has become the flagship drink of North American summers. Problem: many cafés serve it lukewarm, diluted, without character. What we want is the opposite: a powerful espresso, pulled tight, poured over clean ice, with cold milk that doesn’t drown the coffee but extends it.
At Carrera Café, the iced latte follows this principle. The espresso is pulled to order, the ice is fresh, the milk is chosen for its texture even when cold. Every detail counts. Just like in racing.
Always order your iced latte with a double shot. The milk and ice naturally soften the coffee's intensity, and a single shot gets completely lost. The double shot remains present, aromatic, even at the bottom of the glass.
The Pit Stop
The iced signature of Carrera Café
Fast like a pit stop. Satisfying like a podium.
Iced Latte Pit Stop
Double espresso pulled tight, poured hot over crushed ice, whole milk very cold. The crema blends with the milk, creating that amber gradient that signals something serious. Add a seasonal syrup depending on your mood.
✦ The ideal assembly order
- Ice cubes first. Fill the glass to the brim. The ice must be cold, not wet.
- Cold milk. Pour about a third of the glass. The milk sinks into the ice and stabilizes.
- Espresso on top. Pulled tight, poured slowly from above. It rests on the milk, creating the gradient.
- Syrup if desired. Madagascar vanilla, salted caramel, lavender, depending on the season.
- Do not mix right away. Let the customer admire the glass. It’s part of the pleasure.
The variations
Seasonal syrups and options
The basic iced latte is perfect. With a well-chosen syrup, it becomes memorable.
Madagascar Vanilla
Sweet, round, slightly floral. The vanilla doesn’t mask the coffee, it wraps it. The ideal choice for iced latte beginners.
Artisanal Salted Caramel
The classic revisited. Salt enhances the coffee rather than sweetening it. A tension pairing that works with every sip.
Provençal Lavender
Slightly floral, elegant, unexpected. A nod to the sun route, served on the cobblestones of Petit-Champlain. Available seasonally.
In July and August, the barista may offer you a seasonal syrup off the menu. Ask what's new. It's often a limited homemade creation, available for only a few weeks. These special editions are part of the Carrera spirit.
The terrace
The complete summer experience
An iced latte on the terrace, facing the cobblestones of Petit-Champlain. Summer in Quebec at its best.
The terrace at Carrera Café is one of the few in Petit-Champlain that offers both calm and a show. You can watch visitors discovering the neighborhood, locals passing by quickly with a greeting, groups looking for their way. From a terrace chair, you have a view of it all, glass in hand.
In summer, tables fill up quickly. Arrive early in the morning or mid-afternoon, when the tourist groups have headed to the museums and lunch spots. That's when the terrace is at its best: a few tables occupied, the 3 PM light on the facades, the iced latte taking over from the morning espresso.
Summer terrace — the ideal formula
Pit Stop iced latte + Paddock bruschetta or Starting Line focaccia. An hour on the terrace, the cobblestones of Petit-Champlain in front of you, the sun setting toward the river. Hard to beat as a summer break.
The pairings
What to order with your iced latte
The iced latte pairs well with savory. Counterintuitive, but absolutely right.
Starting Line Focaccia
Homemade focaccia, olive oil, and fleur de sel create a superb contrast with the iced latte. The bitterness of the coffee highlights the character of the bread. A classic pairing from Italian coffee culture.
Paddock Bruschetta
Sun-dried tomatoes, creamy burrata, fresh basil. The richness of the burrata with the freshness of the iced latte is a perfect balance for a late terrace lunch.
The tips
Order perfectly at Carrera Café
A few adjustments so your iced latte is exactly what you’re looking for.
If you like the coffee to dominate, ask for the milk on the side or reduce the amount. If you prefer something milder, the standard version is perfect.
Some baristas prefer to cool the espresso before pouring. At Carrera, we pour hot over ice: the thermal shock creates a different, more complex texture and aroma.
Whole milk for texture. Oat milk for a smoother and naturally slightly sweet version. Coconut milk for an unexpected tropical twist. Ask what’s available seasonally.
