Quebec cheeses
at Carrera Café

Quebec produces exceptional cheeses. We have carefully selected them, paired them Italian-style, and served them on a board that tells the story of the local terroir.

From Quebec to the plate

In just a few decades, Quebec has become one of North America's great cheese regions. Its artisanal cheeses now rival the best European cheeses.

A cheese revolution

In the 1980s, artisanal cheesemakers began to emerge in Quebec. Inspired by European traditions but nourished by local pastures, they developed unique flavor profiles adapted to the climate and resources here.

Regions to explore

Charlevoix, Lanaudiere, the Laurentians, the Eastern Townships. Each region brings its characteristics: riverside pastures, raw autumn milk, cellar aging. We prioritize selecting our cheeses from artisanal producers less than 100 km from Quebec City.

Why Quebec cheeses on an Italian board

Because Italians know better than anyone that cheese is an art. Because the creamy texture of a Quebec brie pairs perfectly with artisanal focaccia. And because Carrera Café is at the crossroads of two cultures: Quebec terroir and Italian cuisine.

The best of refined terroir

Our selection changes with the seasons, depending on arrivals and aging. Here are the profiles you will regularly find on our boards.

Charlevoix

Le Migneron

Semi-firm cheese

Soft and creamy texture, notes of butter and mushroom. One of the most awarded cheeses in Quebec. A must on our signature board.

Lanaudiere

Le Sir Laurier

Soft washed rind cheese

Orange rind, creamy paste, powerful aromas. A cheese with character that stands out on the board and in memories.

Eastern Townships

Comtomme

Semi-firm cheese

Inspired by Spanish Manchego but rooted in Quebec terroir. Notes of hazelnut and caramel. Ideal at the start of the board.

Seasonal selection

Quebec Brie

Soft cheese with bloomy rind

White bloomy rind, paste that gently flows at room temperature. Notes of mushroom and cream. The perfect introduction.

★ Our selection

We work with the same producers as the top restaurants in Quebec. Our rule: cheeses must tell a story, have a clear place of origin, and be aged at the right time. The rest follows.

The art of the Italian table

A board with us is not just cheeses. It’s a composition, a story, an invitation to linger. Each element has its place and role.

Sharing

The summer board

In the summer season, the board lightens up. Fresher cheeses, homemade condiments, grilled focaccia. The perfect pairing with a spritz or a rosé on the terrace. For those who want to enjoy without feeling heavy before exploring the neighborhood.

Winter

The comfort board

In winter, aged cheeses take the lead. Firm cheeses, washed rinds, more intense profiles. Ideal pairing with a glass of spiced mulled wine or a full-bodied red. The board for long evenings and lasting conversations.

Cheeses and drinks

A good cheese deserves a good drink. Here are our pairing recommendations, designed by our team to bring out the best in each profile.

Migneron+Dry white wine, mineral notes. Or a short espresso to awaken the aromas of butter.
Sir Laurier+Light red, red fruits. The character of the cheese calls for a wine that matches it.
Comtomme+Ice cider or malt beer. Or an iced latte for an unexpected and perfect pairing.
Quebec Brie+Spritz or bubbles. The sweetness of the cream calls for the lightness of bubbles. A classic.

◆ Team tip

Cheese and coffee work better together than you might think. A short espresso with a semi-firm cheese: the bitterness of the coffee contrasts with the creaminess of the cheese and cleanses the palate. Try it, you won’t regret it. Our espresso guide →

How to order it

The board is enjoyed on site, in Petit-Champlain, on the terrace or indoors. It is shared, and taken at a leisurely pace.

■ Our producers

We work with short supply chains. Our charcuteries come from Charlevoix, our bread from Borderon and Sons Bakery, our cheeses from selected Quebec producers. Each board is a way to support the local terroir. Discover our charcuteries →
