Honey and beekeeping in Quebec: local sweetness at Carrera Café

From the hives of Beauce to the wildflowers of Charlevoix, Quebec honey is an exceptional local product. Floral, fruity, sometimes balsamic: each jar tells a story of a landscape, a season, a passionate artisan.

Beekeeping

A century-old tradition in Quebec

Beekeeping in Quebec dates back to the first European settlers. Today, Quebec beekeepers produce some of the purest and most complex honeys in North America.

The bee arrived in New France with European settlers in the 17th century. Since then, beekeeping has developed throughout the Saint Lawrence Valley, benefiting from the exceptional richness of Quebec's flora. Field clovers, linden flowers, wild blueberries from Lac-Saint-Jean, and buckwheat flowers from the Eastern Townships produce honeys with very distinct characters, reflecting a unique botanical geography.

★ Key Figure More than 10,000 beekeepers in Quebec

Quebec has more than 10,000 beekeepers and about 500,000 hives spread across the province. A strong and well-organized artisanal industry that produces over 4,000 tons of honey each year, a significant portion of which is exported to Europe and Asia.

Honey Varieties

A rainbow of flavors

Each region of Quebec produces honey with distinct characteristics, directly influenced by the local flora and climate.

Clover honey: the classic

Clear, mild, slightly floral: clover honey is the most produced in Quebec. Its natural sweetness and lingering taste make it the perfect companion for black tea and drip coffee. It crystallizes quickly and takes on a creamy texture that spreads perfectly on Borderon country bread.

Blueberry honey: the pearl of Lac-Saint-Jean

Produced from the vast wild blueberry fields of Lac-Saint-Jean, this honey is one of the most sought after by gourmets. With a dark amber color, it offers intense fruity aromas that directly evoke the northern forests. An exceptional pairing with goat cheeses and aged charcuterie.

Buckwheat honey: the character

Brown, intense, almost spicy: buckwheat honey is not for the faint of heart. Produced in the Eastern Townships, it offers a rare aromatic depth, close to malt and licorice. Black coffee lovers use it as the only possible sweetener: it only enhances the roasted notes of espresso.

Rare Wildflower honey from Charlevoix

Produced in limited quantities by a few artisanal beekeepers from Charlevoix, this polyfloral honey captures the unique complexity of the region’s mountain flora. Each harvest is different depending on the summer’s climatic conditions: a living, unpredictable, and always exceptional product.

Artisanal Beekeepers

Those who make the difference

Behind every jar of artisanal honey, there is a story, a passion, and hundreds of hours of silent work among the hives.

Quebec artisanal honey is the result of a deep commitment to quality and respect for the colonies. Artisanal beekeepers limit the number of hives, carefully choose their locations, and harvest at maturity without rushing. Some go further by practicing natural or organic beekeeping, without chemical treatments, resulting in honey of exceptional purity.

Pairings

Honey and coffee: an obvious pairing

Honey and coffee share the same ability to evoke landscapes, terroirs, and seasons. Their meeting in the cup is natural.

Clover honey in a latte

Half a spoonful of clover honey in a hot latte is a great substitute for regular sugar. Its gradual sweetness and light floral aroma enhance the creaminess of steamed milk without masking the complexity of the coffee.

Buckwheat Honey on a Board

On our artisanal cheese board, a drizzle of buckwheat honey on a soft cheese is an unforgettable combination. The intensity of the honey responds to the ammoniac notes of the cheese in a dialogue that lingers long on the palate.

Barista Tip

For a naturally sweetened espresso, try our blueberry honey latte from Lac-Saint-Jean: the fruity notes of the honey create a high-intensity harmony with our Sicilian blend, like a sharp turn on a winding track. Complex, enveloping, unforgettable.
