Growing strongly for 30 years
In less than 30 years, Quebec has become one of North America’s major cheese regions. Dozens of artisanal cheesemakers have emerged, developing unique techniques that blend French tradition with Quebec terroir. Some of their cheeses have won international awards.
At Carrera Café, we select our cheeses according to the season, arrivals, and recommendations from our suppliers. Each board is therefore different, always surprising.
Borderon et Fils
Quebec’s bread artisan
The Borderon et Fils bakery is one of Quebec’s artisanal institutions. For several generations, they have kneaded their sourdough bread respecting a baking tradition that makes no concessions to speed or industrialization. Their focaccia, which arrives every morning at Carrera Café, is the best proof.
The process
Kneaded the night before, risen all night, baked in the early morning hours. Borderon et Fils focaccia arrives at Carrera Café still warm every day.
