From mulled wine to Quebecois mulled wine

Mulled wine crosses centuries and borders. At Carrera, it takes on a distinctly Quebecois character.


Mulled wine is a tradition as old as the European winter. The Romans drank it flavored with honey, the medievals added spices and rare herbs. In Germany, it’s the Glühwein of Christmas markets. In France, a simple and straightforward mulled wine. In Quebec, it becomes something else: more generous, more aromatic, more Nordic.

At Carrera Café, we worked on our recipe for several seasons to find the perfect balance between mild spices, the acidity of red wine, and the sweetness of citrus. Le Paddock is the result of this research.

Ceylon Cinnamon vs Cassia

Ceylon cinnamon, sweet and complex, is used at Carrera. Cassia, more common, results in a bitter and less refined taste. This small detail changes everything in the final cup.

Fresh orange zest

We use organic orange zest, never juice. The zest brings essential oils and fruity aromas without the acidity of the juice. It's the touch that elevates the Paddock above classic recipes.
