There is a moment in June, around mid-June, when the Carrera Café terrace comes back to life. Not gradually. All at once. The umbrellas open, the chairs are brought out, and the first iced coffee orders arrive even before the heat is really here. Regulars have been waiting for this.

Summer in Quebec is short, intense, and bright. Days can exceed 30 degrees Celsius. The Petit Champlain terrace, facing east, enjoys the morning sun and stays pleasant until early afternoon. That's where rituals are formed.

The iced latte: the summer drink

The iced latte at Carrera Café is not hot coffee poured over ice cubes. It's a specific extraction: a double espresso quickly cooled, poured over a glass full of ice with cold milk. The difference is in the texture: a true iced latte has that middle layer where the espresso and milk meet without fully mixing.

In July, it's our most popular order. Before 10 a.m., customers often choose a hot cappuccino even in the heat, out of habit for the morning ritual. After 10 a.m., the iced latte takes over.

Cold brew: the slow alternative

For those who want something longer, smoother, cold brew is extracted for 12 hours in cold water. The result is a coffee without bitterness, naturally sweet, with notes that evoke chocolate or hazelnut depending on the bean's origin.

Cold brew is drunk pure or with oat milk. It keeps cold for up to two weeks. It's a drink of patience, and in Quebec in summer, patience deserves to be rewarded.

The morning terrace: a natural theater

Between 8 a.m. and 10 a.m. in summer, the Carrera Café terrace is one of the best spots in the city. The alleys of Petit Champlain wake up. Deliveries arrive at nearby shops. The first tourists come down the funicular, map in hand.

From the terrace, everything happens within a twenty-meter radius. It's a natural theater where each morning brings its own cast. Some customers come every morning for that, as much as for the coffee.
