While everything speeds up, cold brew takes its time. Twelve to twenty-four hours of cold infusion, and the result is a drink with a sweetness and depth impossible to achieve otherwise.

The infusion that changes everything

Cold brew is a coffee extraction method at room or cold temperature, without any heat. Coarsely ground coffee is steeped in cold water for 12 to 24 hours, then filtered. The result is a coffee concentrate with remarkable smoothness and aromatic complexity.

The absence of heat radically changes the chemical profile of the extraction. The acids that give hot coffee its bite are not released the same way when cold. Cold brew is therefore naturally less acidic, smoother, more chocolatey, with an almost syrupy texture that makes it instantly addictive.

The grind is everything

For cold brew, the grind must be coarse, close to the texture of coarse salt. A fine grind over-extracts and produces a bitter coffee even without heat. The coarse grind allows cold water to slowly extract natural sugars and complex aromas, without touching aggressive acids.

At Carrera, our cold brew is prepared with a coffee-to-water ratio that produces a concentrate. It is then diluted at service according to preference: pure on ice for intensity lovers, cut with milk or water for a softer profile.
