Bio de Charlevoix is the result of a simple philosophy: raise animals well, process carefully, never sacrifice quality for quantity. The animals are raised outdoors, fed naturally, without antibiotics or growth hormones.
The result is felt in every slice: a firm but never dry texture, deep flavors that reveal the terroir, a rich color that testifies to the quality of the aging. This is what Carrera Café serves at its tables.

Bone-in ham · Dried and aged
Slowly dried, carefully aged. Charlevoix bone-in ham is the centerpiece of our board. Notes of hazelnut, a melting texture, remarkable length on the palate.
Dry sausage · Mild spices
