Quebec Cheese

A thriving art


In thirty years, Quebec cheesemaking has undergone a silent revolution. Dozens of artisanal producers have invested in the regions, experimented with aging methods, and created unique products that didn’t exist anywhere else.

Charlevoix, Eastern Townships, Lanaudière, Chaudière-Appalaches: each region has developed its own character. Local milk, terroir, salty or woody air: all of this is found in the cheese.

At Carrera, we collaborate with cheesemakers selected for their rigor and originality. Our menu changes with the seasons and our team’s favorites.

Cheese from the Magdalen Islands, whole cow’s milk. Semi-firm cheese, washed rind. Pronounced taste, maritime flavor.

Fresh Quebec goat cheese, local herbs. Light, creamy, tangy. Ideal on Borderon focaccia.

Quebec Region

Comtomme

Semi-firm cheese, raw milk, aged 60 days. Hazelnut, buttery, slightly fruity. A Quebec classic.

Cru des Érables

To remember

Take the cheese out of the cold 20 minutes before serving.

Cold cheese releases fewer flavors. Room temperature allows it to express its full aromatic potential. This is a detail we systematically apply to all our boards.
