What is Latte Art?

The art of precise pouring


Latte art is the craft of creating decorative patterns on the surface of a café au lait by pouring textured steamed milk over an espresso. Rose, heart, leaf, rosette: each pattern requires years of practice and a perfect understanding of milk physics.

At Carrera, latte art is not a gimmick. It’s a signature, a quality commitment. If your cup is decorated with a beautiful pattern, it means the milk was heated to the right temperature, the texture is perfect, and the espresso was extracted correctly.

The 4 key steps

  1. The perfect espresso. Extraction at 93°C, 25-30 seconds. The foundation of everything.
  2. Milk at 65°C. No more, no less. Beyond that, the milk burns and the taste changes.
  3. The silky texture. Homogeneous micro-foam, with no visible bubbles. Like paint.
  4. Precise pouring. Angle, height, rhythm: the gesture is done in a few seconds.

The Science of Foam

Why whole milk is better


Whole milk protein creates, when heated, a molecular structure that traps air bubbles evenly. It is this structure that allows the milk to remain fluid while being thick enough to create a stable pattern.

Plant-based milks offer different results: oat is the best substitute, almond is difficult to work with, soy produces a compact foam. Our baristas master all types of milk.
