Never prepare your espresso in advance or let it cool before pouring. Hot espresso poured directly over cold milk creates that famous visual contrast effect and preserves the coffee’s volatile aromas.
The quality of the ice cube also matters. Too porous ice cubes quickly dilute the drink. At Carrera, we use dense ice cubes that melt slowly to keep the drink fresh without diluting it.
