You order a flat white. The barista takes a few seconds longer than you expected. Then they place the cup in front of you: a rosette leaf drawn in the foam, clean, symmetrical, elegant. This seemingly simple gesture is the result of hundreds of hours of practice. Here’s what latte art really represents: a discipline halfway between technique and artistic expression.

The foundation of latte art: perfect foam

Before talking about drawing, we must talk about foam. Good latte art starts with flawless milk emulsion: neither too firm nor too liquid, with a silky texture resembling velvet. This foam is achieved by incorporating warm air into cold milk during heating. Temperature, speed, and pitcher angle—all matter. Most baristas spend weeks mastering this step before even trying to draw.

Free pouring: drawing with movement

The main latte art technique, called free pouring, involves creating patterns by controlling how the milk is poured. By tilting the pitcher, adjusting the pouring height, and making quick side-to-side movements, the barista draws shapes on the espresso’s surface. The rosette, heart, and tulip are the basic patterns. Each barista then develops their own style and variations.

Engraving and etching: art on the next level

For more complex designs—portraits, landscapes, elaborate geometric patterns—baristas use tools like toothpicks or styluses to sculpt the foam after pouring. This technique, called etching, allows for near-surgical precision. World latte art championships reward these creations that can take several minutes to complete and disappear with the first sip.
