The espresso tonic is one of those drinks that initially divides opinion but wins you over from the first sip. The idea seems counter-intuitive: pouring a hot espresso shot over cold, sparkling tonic water. It should be a disaster. But it's not.

Born in Scandinavian coffee shops about twenty years ago, the espresso tonic has spread worldwide as specialty coffee culture developed. Today, it can be found in the best coffee shops in Tokyo, London, Melbourne, and of course, Quebec City.

THE CHEMISTRY OF FLAVORS: WHY IT WORKS

The key lies in the chemistry of flavors. The bitterness of quinine in tonic water resonates with the natural bitterness of espresso: instead of adding to them, it balances them. The carbonation creates a light and lively texture that contrasts with the density of the coffee. The result: refreshing, complex, surprising.

HOW TO PREPARE IT PERFECTLY

Technique matters as much as ingredients. First, fill the glass to the brim with ice. Pour cold tonic water—good quality, with firm bubbles. Then, extract the espresso directly onto the mixture, in a slow stream, to create that striking visual effect where the coffee descends through the sparkling liquid. Serve immediately.

Recommended ratio: a double espresso (40 ml) to 120 ml of tonic water. No sugar. No syrup. Simplicity is what makes this drink great.
