Espresso tonic is one of those drinks that divides opinion at first but wins over from the first sip. The idea seems counterintuitive: pouring a shot of hot espresso over cold, sparkling tonic water. It should be a disaster. It isn’t.
Born in Scandinavian cafés about twenty years ago, the espresso tonic has traveled the world as specialty coffee culture has grown. Today, it can be found in the best cafés in Tokyo, London, Melbourne, and of course Quebec.
THE CHEMISTRY OF FLAVORS: WHY IT WORKS
The key is in the chemistry of flavors. The bitterness of quinine in tonic water resonates with the natural bitterness of espresso: instead of adding up, it balances them. The carbonation creates a light and lively texture that contrasts with the density of the coffee. The result: refreshing, complex, surprising.
The choice of espresso is crucial. A bean with fruity or floral notes — typical of Ethiopian or Kenyan coffees — pairs perfectly with tonic water. An espresso that is too roasted or woody can overpower the mix. That’s why specialty coffee makes all the difference.
HOW TO PREPARE IT PERFECTLY
Technique matters as much as ingredients. First, fill the glass with ice to the brim. Pour cold tonic water — quality, with firm bubbles. Then extract the espresso directly over the mixture, in a slow stream, to create that striking visual effect where the coffee sinks through the sparkling liquid. Serve immediately.
Recommended ratio: a double espresso (40 ml) to 120 ml of tonic water. No sugar. No syrup. Simplicity is what makes this drink great.
