Winter in Quebec City is a unique experience. Mulled wine is one of the simplest and most authentic pleasures.
There is something almost ritualistic about drinking mulled wine in Quebec City in winter. The city transforms starting in November: the Frontenac castle under the snow, the streets of Petit-Champlain decorated with lights, the crisp air that tingles the cheeks and invites you to step into a cozy café.

From December to March, Carrera mulled wine is our second most ordered drink after the latte. Some customers make it their daily ritual all winter long. We don’t complain about that.
The mulled wine season also coincides with the Quebec Carnival, the Film Festival, carriage rides and visits to the Old Port Christmas market. So many reasons to come through our door and leave with warm hands and a smile.
The recipe
Spices, citrus, red wine: our secret formula
Each batch is homemade every morning. No concentrate, no powder. Red wine, whole spices, fresh citrus.
Carrera Mulled Wine — Homemade Recipe
Full-bodied red wine, cinnamon stick, star anise, cloves, green cardamom, orange and lemon zest, local honey, cane sugar. One hour of gentle simmering. Served in a large stemmed glass with a slice of dried orange.

The choice of wine is crucial. We work with a fruity red wine but structured, with enough body to carry the spices without being dominated. A wine that's too light disappears behind the cinnamon. A wine that's too tannic becomes harsh when heated.
Whole spices, not powdered. That's the absolute rule. Cinnamon sticks release their aromas gradually, without bitterness. Star anise brings that subtle aniseed touch that distinguishes a good mulled wine from a mediocre one. Green cardamom is our little signature.
❖ The barista's tip
Never boil the wine. The ideal temperature is between 70 and 75°C. Beyond that, the alcohol evaporates too quickly and the fine aromas disappear. A kitchen thermometer is your best ally for perfect mulled wine.

Not all mulled wines are equal. Here's how to distinguish an artisanal mulled wine from an industrial preparation.
The 3 signs of a great mulled wine
An exceptional mulled wine is recognized by three signs: whole spices visible in the glass, a deep ruby color without excessive transparency, and a long finish where the spices express themselves after the last sip.
Beware of instant mulled wines. Aromatic powder sachets and industrial concentrates produce flat results, without depth. The difference with homemade mulled wine, slowly infused with fresh spices, is immediately noticeable.
At Carrera, each batch is prepared in the morning. We never reheat the same batch twice. It's a quality commitment we take very seriously. The mulled wine you drink early afternoon is at its peak.
