Why it works
The logic behind the pairing
The coffee-cheese pairing relies on precise gustatory mechanisms, not vague intuition.
Coffee contains hundreds of aromatic compounds, including acids, bitters, and roasted sugars. Cheese, meanwhile, develops its own acids, lactic notes, cultures, and fats during aging. These two complex aromatic worlds meet on the palate with a logic similar to that of wine and cheese.
The basic rule: the more intense and bitter a coffee is, the more assertive and fatty the cheese must be to hold the pairing. An espresso calls for a hard aged cheese. A mild filter coffee calls for a fresh or lightly aged cheese. The latte, with its milky sweetness, finds its echo in a bloomy rind cheese.
Intensity meets intensity
The golden rule of coffee-cheese pairing is the same as for wine: match comparable intensities. A light coffee with a delicate cheese, a strong coffee with a bold cheese. Balance comes from complementarity, never from overpowering.

Espresso + 3-year aged Cheddar
The most obvious and successful pairing. The bitterness of the espresso cuts through the pronounced fat of the aged cheddar, while the hazelnut notes of the coffee respond to the caramelized notes of the aged cheese. The saltiness of the cheddar further enhances the aroma of the crema. A classic.
Cortado + Tomme des Cantons
The tomme, cheesy and slightly earthy, finds an ideal partner in the cortado. The milk in the cortado softens the rustic aspect of the tomme, and the herbaceous notes of the cheese harmonize with the floral aromas of a well-extracted coffee. A Franco-Quebecois pairing.
Latte + Quebec Brie
The sweetness of the latte and the creamy texture of the brie form a similarity pairing: two melting textures, two milky sweetnesses. The slightly mushroomy notes of the brie rind bring the interesting contrast that prevents the pairing from becoming too monotonous.
Filter coffee + Fresh goat cheese
Filter coffee, with its bright acidity and lightness, pairs remarkably well with fresh goat cheese. The acidity of both adds up without clashing, and the freshness of the goat cheese contrasts pleasantly with the comforting warmth of the long coffee.
Ristretto espresso + Bleu de la Moutonnière
The ristretto, shorter and more concentrated than a standard espresso, can stand up to the intensity of an aged blue cheese. The sharp notes of the blue and the dense bitterness of the ristretto create a high-intensity pairing, reserved for adventurous palates. A memorable experience.
