It's hot. The sun beats down on the cobblestones of Petit Champlain. And this heat isn't something you fight with air conditioning; you embrace it with a properly prepared iced coffee.
At Carrera Café, the summer season has its own philosophy. We don't just cool down an espresso. We rethink the drink, choose the method, select the beans, and adapt each step so that the cup is as precise in July as it is in January.
Why iced coffee deserves as much attention as an espresso
The temptation would be to take a lukewarm espresso and throw ice cubes in it. The result: a watery, bitter, characterless cup. That's not what we serve here.
A good iced coffee starts with beans roasted for cold. The fruity and chocolate notes, which can sometimes blend into the warmth of an espresso, express themselves differently on ice. They become clearer, sharper, almost more honest.
The method also matters. Here, espresso is extracted over ice, using flash brewing, to capture the aroma at the precise moment it's most vibrant. Dilution is calculated. The balance between acidity, body, and the natural sweetness of the bean is maintained.
The iced latte: our patio star
If pure iced coffee expresses the quintessence of the bean, the iced latte is the ultimate social drink. Creamy, smooth, beautiful in the glass, it's perfect for a solo patio moment or a brunch with good company.
Our baristas prepare the iced latte with a double espresso extracted over fine ice, topped with oat or whole milk, lightly frothed cold. The texture is silky. The ratio is perfected. We don't drown the coffee in milk; we make them converse.
It's this precision, this attention to detail, reminiscent of a qualifying round, that makes the difference between an ordinary drink and a memorable experience.
The Petit Champlain patio: drinking outdoors, drinking well
Quebec City in summer is also about this: a patio in the heart of Old Quebec, the grey stones of Petit Champlain, tourists passing by, locals settling in. And in the glass, something cold and precise that knows exactly what it is.
You sit down. You take your time. Sometimes you hear music drifting up from the street. And this iced coffee, served in a clean glass, with ice cubes that don't melt too quickly, becomes part of the scenery, the season, the city.
