Roaster Portrait · Le Journal du Café
Géogène
Portrait of a Quebec specialty roaster. Some names come up repeatedly in conversations among specialty coffee lovers in Quebec. Géogène is one of them. A roaster who chose precision over quantity, remarkable origins over consensual blends.
The Portrait
What Sets Them Apart
In the Quebec coffee scene, Géogène holds a unique place. Not the biggest, not the most visible, but certainly one of the most rigorous and exciting.
The Philosophy of Single Origin
Géogène has built its identity on a simple conviction: the best coffee is the one whose source is known. Every lot they roast is traced back to the farm or cooperative of origin. Producer name, region, variety, altitude, processing method: everything is transparent and accessible.
It is this demand for traceability and precision that led us to choose Géogène as the roasting partner for Carrera Café. We share the same conviction: a coffee you can tell a story about is a coffee with a soul.
Philosophy
What Guides Them
Géogène's philosophy can be summed up in one sentence: reveal the terroir of the bean rather than standardize it. Each origin has its character, and their role is to enhance it, not mask it.
Reveal, Not Transform
Unlike industrial roasters who seek a standard and reproducible profile, Géogène adapts its roasting to each lot. A delicate Ethiopian Yirgacheffe will be roasted on a shorter, gentler curve to preserve its floral notes. A more robust Brazilian Cerrado will withstand a slightly longer roast to develop its body and caramel notes.
Sourcing
Trips, Relationships
The best lots are not bought from a catalog. They are found on the ground, on farms, during cuppings with producers.
Direct Relationships
Géogène maintains direct relationships with several cooperatives and producers around the world. These relationships not only allow access to the best lots before others but also ensure producers are paid above fair market standards.
The origins they select are those that tell a story: a producer whose agroforestry practices preserve biodiversity, a cooperative that reinvests quality premiums in the education of the community’s children.
Roasting
The Art of Development
Each batch roasted by Géogène is the result of meticulous profiling work. Temperature, speed, airflow: each parameter is adjusted batch by batch.
Artisanal Drum Roaster
Géogène works with a medium-capacity drum roaster. Each batch is digitally recorded, allowing faithful reproduction of successful profiles.
Batch Profiling
Unlike standardized industrial roasts, each Géogène batch receives a tailored profile. The bean "speaks" during roasting and the roaster adjusts accordingly.
The Selection
Current Origins
Géogène works in seasonal rotation. Batches arrive on time and in season, at harvest, to guarantee maximum freshness.
Yirgacheffe G1 Washed
The origin that Géogène has mastered from the start. Floral, delicate, with a bright acidity. Their light roasting preserves all the nuances of this exceptional terroir.
Cerrado Mineiro Natural
Their Brazilian batch: round, chocolaty, with a natural sweetness that makes it the perfect base for espresso blends. This batch forms the heart of our Senna Signature.
Our Partnership
Géogène and Carrera Café
Carrera Café and Géogène share more than a business agreement. It’s a shared vision of coffee: demanding, transparent, rooted in the Quebec territory and the best global origins.
A Shared Vision
Géogène roasts all our coffees in Quebec, in small batches according to our actual demand. We receive the batches a few days after roasting. This guaranteed freshness is the foundation of the experience we offer you at Petit-Champlain.
Together, we build a local and ethical supply chain: from the producer's farm to the counter of our café, every step is known, traced, and taken responsibility for.
