Roasting: when the bean enters the performance zone

April 2026 · 4 min read · Carrera Café · The Coffee Journal

In car racing, there’s a precise moment when everything changes. When the driver presses the accelerator out of a turn and the engine hits its optimal power zone. Coffee roasting is exactly that moment. It’s when the green, raw, flavorless bean transforms into something extraordinary.

The chemistry behind the magic

During roasting, the bean undergoes hundreds of chemical reactions. Sugars caramelize, acids transform, oils migrate to the surface. Temperature rises, pressure builds inside the bean until the famous "crack," that little snap indicating the bean has opened. Much like the moment a turbo engine reaches full pressure and delivers all its power.

Light, medium, or dark: choose your path

Each roasting level gives a different flavor profile. Light roasting preserves the bean’s original aromas, fruity and floral, with a bright acidity. It’s the high-performance setup of a race car. Medium roasting offers the perfect balance between aromatic complexity and body, like a versatile setup that excels on all track types. Dark roasting develops notes of chocolate, caramel, and a noble bitterness. It’s the raw power of a muscle car on a straight line.

The Carrera Café know-how

At Carrera Café, our roasters work with the precision of an F1 mechanic. Each batch is monitored to the exact degree and second. Nothing is left to chance because we know a poorly roasted bean is like a poorly tuned engine: it doesn’t forgive. The result in your cup must be perfect, every time.

We collaborate with Brûlerie Rousseau, an excellent Quebec roaster, to guarantee you coffees roasted with care and expertise. From carefully selected green beans to the final cup, every step is mastered to reveal the best of each origin.
