Decaf has a bad reputation. Many associate it with bland vending machine coffee. That's a mistake. With a good decaffeination process and an excellent starting bean, decaf is a full-fledged beverage.

HOW IT WORKS
Decaffeination processes
Caffeine is removed from the green bean before roasting. What matters is the process used: some preserve the flavors, others destroy them.
Supercritical CO2 process
Pressurized CO2 extracts only the caffeine, without affecting aromatic compounds. Result: a decaf that very closely resembles the original coffee. This is the most prized process, used by specialty roasters.
