There’s espresso. And then there’s ristretto. The difference isn’t in the amount of coffee or the roast: it’s in the time. In the precision of the action. In the mastery of the extraction.

WHAT IS A RISTRETTO?

Ristretto is a shorter extraction than a standard espresso. Same coffee dose, same pressure: but the extraction stops at 15-20ml instead of the usual 30ml. The result is more concentrated, less bitter, and more complex in aroma. It’s espresso pushed to its maximum intensity.

WHY RISTRETTO CHANGES EVERYTHING

In the first milliliters of an extraction, acids and sugars are released first. Bitterness comes later. By cutting short, the ristretto captures the best of the bean and leaves behind what can become harsh. It’s a matter of balance, not quantity.
