WHY FILTER COFFEE IS A REVELATION
Filter coffee, long overlooked in favor of espresso, is now experiencing a remarkable renaissance. These slow brewing methods highlight the aromatic complexity of specialty beans like no other technique can. The fruity, floral, and acidic notes of a good Ethiopian or a quality Colombian coffee fully reveal themselves in a well-prepared filter cup.
The V60, Chemex, and Aeropress are the three benchmark methods for entering the world of specialty filter coffee. Each has its own personality, advantages, and unique cup profile.
THE V60: CLARITY AND ELEGANCE
Hario's V60 is the reference tool for baristas. Its conical shape and spiral ridges allow for a consistent and controlled flow. It produces a remarkably clear cup, where the delicate aromas of the bean are fully expressed. Recommended ratio: 15g of coffee for 250ml of water at 93°C. The grind should be medium-fine and consistent.
CHEMEX AND AEROPRESS: TWO CHARACTERS
The Chemex, with its thick paper filters, produces an even cleaner and brighter cup than the V60. Its larger size makes it ideal for brewing multiple cups at once. The Aeropress, on the other hand, is a versatile and forgiving tool that produces a more concentrated and rounded coffee, using slight pressure. Perfect for those who like to experiment.
