GRINDING: THE SECRET TO A GOOD EXTRACTION
Grinding is the most critical step in coffee preparation. A consistent grind adapted to your brewing method is the key to a successful extraction. Too fine, the coffee will be over-extracted, bitter, and astringent. Too coarse, it will be under-extracted, acidic, and lacking body. The grinder is therefore the most important investment to improve your daily cup.
The main distinction is between blade grinders and burr grinders. Blade grinders break the beans irregularly. Burr grinders (conical or flat) cut the beans uniformly, which is essential for good extraction.
